High-Speed Forecourt Kitchens: Design for the Whole Order
An oven’s cook cycle is only one part of a food order. A forecourt kitchen also has to receive the order, assemble ingredients, cook the product, package it and hand it to the correct customer. A fast appliance does not guarantee a fast overall service.

What the equipment documentation supports
Merrychef describes the conneX range as combining convection, microwave and impingement technologies. That supports the description of a rapid-cook appliance. It does not establish one safe cooking time for every sandwich, pizza or frozen product. Merrychef conneX heat technologies
A rollout should use validated recipes, approved operating procedures and the installation requirements for the particular appliance. Staff need clear responsibility for cleaning, checks and taking equipment out of service when required.
Analysis: design the order path
Map the sequence from selection to collection. Identify where an order can be delayed or lost and how staff see the queue. Test modifiers, unavailable ingredients, cancellation and refund handling before relying on an integration between the POS and kitchen display.
If charging information is shown in the store, confirm what the charging system actually exposes and how current that information is. Estimated vehicle completion time should not become a guaranteed meal deadline. Charging and kitchen systems have different failure conditions and should each have a workable fallback.
Match the menu to capacity
Select a menu that staff can execute during peak demand with the available preparation space and equipment. Record the complete order time, stockouts, remakes and waste. A successful trial should demonstrate repeatable service rather than an isolated fast cook cycle.
For products packaged before customer selection, check whether PPDS requirements apply and use the appropriate labelling process. Do not assume a digital ordering screen replaces a required package label. FSA labelling guidance for PPDS food
Build contribution estimates from actual ingredient, packaging, labour and service costs. Expand menu complexity only when it improves the customer offer without undermining delivery consistency.
