Forecourt foodservice: a practical operating plan

Frame a food-to-go project around menu execution, food safety responsibilities, ordering, collection and measurable waste.

Begin with the menu

Choose the products and service periods to evaluate before selecting equipment. Map preparation, storage, holding and collection for each item. Assign responsibility for checking applicable food safety requirements; do not treat an equipment purchase as proof that the complete operation meets them.

Map the whole order

Follow an order from entry to kitchen preparation and collection. Identify how payment, changes, substitutions and refunds appear. Define who resolves an order that is paid for but has not reached the kitchen, and how the customer receives a clear explanation.

Create an operating baseline

Record what is discarded, when and why. Keep consistent units and distinguish purchase cost from selling price. Record changes in opening hours, staffing, product availability and demand alongside any trial. A change in sales alone cannot establish that new equipment caused an improvement.

Set the next decision

Use the operating record to decide whether to adjust quantities, simplify the menu, change collection or investigate a bottleneck. Separate measured results, staff observations and hypotheses for the next trial. Follow the linked journal coverage for source context and further reading.
