Establish supported interfaces

Ask each supplier to identify the supported interface, licence, version and responsibility for integration support. Put the agreed configuration in the acceptance record. A reference architecture should be labelled as a proposal until it has been verified for the site.
Analysis: test transactions before a cutover
Use representative products, price changes, promotions, returns and mixed tender where supported. Compare the virtual basket, POS receipt, stock movement and settlement record. Deliberately test timeouts and repeated requests to see whether a transaction is lost or charged twice.
Plan a controlled transition with named decision-makers and a rollback condition. Keep the previous service path available where the design allows it. Shadow operation can help expose errors, but it should not be described as a universally available vendor feature.
Protect payments and operations

Separate installation success from commercial success. Record disruption, assistance time, exceptions and maintenance effort as well as checkout speed. If staff hours move to foodservice, measure the resulting contribution rather than counting the same hours as both labour savings and extra operating capacity.
A sound rollout decision comes from supported compatibility and a documented pilot. The supplier should be able to show how the site continues serving customers when its new component is unavailable.
